Do we need to get a driver's license & register our car in the new state if we're going to law school in a different state from where we're from?
Realizing right now how much of a pain in the ass it's going to be if I renew through mail but also don't want to re-register in two years when I go back home.

Might depend on the state, but generally no. When you're a student out of state, you don't need a new license or car registration. Once you lose student status, should you stay in that state, you should update everything. But even then, there's not some huge impetus to get it changed outside a discomfort with a license and/or car registration that doesn't reflect your current living situation.
Register your car and get a new license when you settle down in a job. In the meantime, don't stress about it.
