The firms wait to say much of anything, even while they interview candidates. And they can wait an awful long time. If you're holding out through February, you should realize your chances are diminishing each day. I would find out about peers getting 1L SAs in January and February, and then one or two months later I would get a rejection letter.
You're better off having applied to something else you still want, and if you are in the situation where you are going to back out of your existing commitment for a 1L SA, you're better off than if you waited and had nothing.

Then pick other external opportunities so you're not burning bridges at school. I'm not saying people are going to be happy with you - I'm telling you that's a risk you have to take. And frankly, the risk of you having to back out of another job for an SA is low, because the chance of getting a 1L SA is low. That's why I'm doling out this bit of unsolicited advice. I'm suggesting you have the calculus backwards and you're convincing yourself you are likely to get one of these golden tickets.

Is it pretty common for firms not to respond to e-mails about our grades? Even some firms I have already interviewed with have not responded to me sending them my grades.

So I was talking to a recruiter back in November and she said that Skadden NYC was still deciding on how many 1Ls to hire but she said it would be between 4 and 6 with half doing the pro-bono summer. I thought that was 14 for the whole program nationwide? 14 for New York only sounds really high...
50-75 interviews in one week for these 3-4 hour slots also sound a bit implausible.

No, 14 for NYC. You can look at their nalp stats too. Also the recruiter verbatim told me 12 for nyc "but last year we couldn't narrow it down to 14, so we chose 12"

Is there any guide on what callbacks are like? Are they a mix of partners and associates? What's the timeline for getting back to you post callback? How long is the norm of them lasting? Etc. I have a callback next week, my career office is tough to find time with, and a google search isn't really cutting it. Thank you!

My personal experience with 1L callbacks (FWIW, all of them have been straight to callback without a screener. My general experience:
1.5-2 hours long with 3 interviews of 30-40 minutes.
Each interview had a partner and an associate.
Met with the recruiter for about 10 minutes pre-interview.
At two firms, I had 4 interviews, 2 with individuals, 2 with two people. Add in the time I met with the recruiter at the beginning and it was about 2 hours and 15 minutes.
