I recently toured Penn and they stressed the importance of LORs being from professors instead of employers. I know Northwestern loves applicants with work experience and I'm wondering if they would be more understanding of my preference for employer LORs. Some of the people I'm considering are attorneys and I think this would be beneficial. Does anyone have any experience with this or can offer guidance?
Background: I work full time and go to class full time in the evening and on weekends. Because of this I know my employers much more intimately than my professors and I can only think of one professor to go to.

You should at least have one LOR from a professor, even for NU. They don't care what kind of employee you are; they want to know what kind of student you are.
And since you're coming straight from school (even though you've been working too), you really should shoot for two professor LORs if you can find another prof who knows you decently well.
