Because there's a risk you'd come across as unfit for law school / a law career.

Because, like it or not, there's still a pretty big stigma surrounding mental health issues. And that's topped off by the fact that the legal field already sees higher rates of suicide, depression, alcoholism, and drug abuse than most careers. So if you apply to schools with a statement about your ongoing battles with crippling depression, it may raise red flags for the reader, even if your statement is meant to highlight how you've learned to cope with your issues.

I think it depends on the specific problem and how well you overcame it. Definitely avoid anything about depression, suicide, drug abuse, alcoholism, even things like schizophrenia or bipolar disorder regardless of how well you're doing now. You don't want to give them any doubt about your competence, especially since so many people do relapse. If its something more minor like general anxiety, OCD, etc AND you've proven you've overcome it, maybe.
